Hot Artichoke Dip

1 (14oz.) can artichokes, broken up
1/2 cup mayonnaise
1 (4oz.) can chopped green chilies
1 cup grated Parmesan cheese

Combine all ingredients and bake in a shallow 4 cup dish for 15 minutes at 350 F.  Serve with crackers.

Marilyn's Moms Brownies

This is a recipe from a dear friend Marilyn Baigue.  They are my favorite!

1 cube butter (softened)
1 cup sugar
2 eggs
1 tsp. vanilla (almond flavoring if desired...this is very good)
1/2 cup cocoa powder
1/2 cup flour
1/2 cup nuts

Cream together the butter and sugar.  Add the eggs and vanilla.   Sift together the cocoa powder, and flour, add to wet ingredients.  Stir in nuts. Pour in an 8 x 8 square pan.  Bake at 350F for 20 minutes.
Double the recipe and bake in a 9 x 13.
(I like to sprinkle powder sugar on top.)

Black Bean Salad


Salad:
2 cups black beans
2 cups corn
1 red onion (chopped)
1 quart cherry tomatoes cut in half
cilantro

Dressing:
1/4 cup lemon or lime juice
1/4 cup red wine vinegar
1/2 cup cilantro
1 tsp. cumin
1/2 cup canola oil
salt
pepper
garlic powder

Mix salad together in a medium bowl. Mix dressing together in a small bowl and pour over salad.  Mix well. Serve as a salad or with tortilla chips.
Optional - You can add jicima, or avacado to the salad.

Pina Colada Party Drink

1 (46 oz.) can Pineapple Juice
1 3/4 - 2 cups Pina Colada Drink Mix (Mr. & Mrs. T)
1/2 scoop Lemon-Lime Gatorade Powder Mix (optional)
2  2 Liter Sprite

Mix the ingredients together, serve over ice.
Serve with pineapple and strawberry skewers.
